Ingredients

  • 2 poundsground beef
  • ·breadcrumbs
  • ¼ cupmilk
  • 2egg
  • ·yellow onion
  • 3 clovesgarlic
  • 1 teaspoonsalt
  • ½ teaspoonblack pepper
  • ¾ cupketchup
  • 2 tablespoonsapple cider vinegar
  • 2 tablespoonsbrown sugar
  • 1 tablespoonWorcestershire sauce

Prep

  1. 01

    Dice 1 medium yellow onion.

  2. 02

    Mince 3 cloves garlic.

Method

  1. 01

    Preheat oven to 350°F.

  2. 02

In a large bowl, combine ground beef, breadcrumbs, milk, eggs, diced onion, minced garlic, salt, and black pepper. Mix gently with your hands until just combined—do not overmix.

  3. 03

Transfer mixture to a 9-by-5-inch loaf pan, pressing gently to shape. Bake for 35 minutes.

  4. 04

While the meatloaf bakes, prepare the glaze: in a small bowl, whisk together ketchup, apple cider vinegar, brown sugar, and Worcestershire sauce.

  5. 05

Remove meatloaf from oven and spread the glaze evenly over the top. Return to oven and bake for 15 to 20 minutes more, until the internal temperature reaches 160°F.

  6. 06

Let rest for 5 minutes before slicing. Serve warm.

Spice Tips

For deeper flavor, add 1/2 teaspoon smoked paprika or garlic powder to the meatloaf mixture. For a spicier glaze, stir in 1/4 teaspoon cayenne pepper or a dash of hot sauce. A pinch of dried oregano or thyme also complements the savory profile.
