Beef and Potato Skillet Hash

Ingredients

  • 2hamburger patties
  • 2 mediumrusset potatoes
  • 2 tablespoonolive oil
  • 1 tablespoonbutter
  • 1 mediumyellow onion
  • 2 clovesgarlic
  • 1 teaspoonsalt
  • ½ teaspoonblack pepper
  • ½ teaspoonpaprika

Method

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Break the hamburger patties into chunks and cook until browned, about 5 minutes. Remove to a plate.

    Add the remaining 1 tablespoon olive oil and 1 tablespoon butter to the skillet. Add the diced potatoes in a single layer and cook without stirring for 4 minutes to brown the bottom.

    Stir the potatoes and add the diced onion. Cook, stirring occasionally, until potatoes are tender and golden, about 10 minutes.

    Add the minced garlic and cook until fragrant, about 1 minute.

    Return the cooked beef to the skillet. Add 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon paprika. Stir to combine and cook for 2 minutes to heat through.

    Taste and adjust seasoning if needed. Serve hot.

Spice Tips

For extra warmth, add 1/4 teaspoon cayenne pepper with the other spices. A dash of hot sauce at the table adds brightness and heat. Fresh parsley or chives make a nice finishing touch.

Top with a fried egg for extra richness. Leftovers reheat well in a skillet with a splash of water.
