Mediterranean Chicken Stir-Fry with Tomatoes and Herbs

Ingredients

  • 1 poundboneless, skinless chicken breasts
  • 1 pintcherry tomatoes
  • 1red bell pepper
  • 1yellow onion (medium)
  • 3 clovesgarlic
  • 3 tablespoonsolive oil
  • 1 teaspoondried oregano
  • 1 teaspoondried basil
  • 1lemon
  • ¼ cupfresh parsley
  • 1 teaspoonsalt
  • ½ teaspoonblack pepper
  • ½ cupfeta cheese (crumbled, optional)

Method

    Heat 2 tablespoons olive oil in a large skillet or wok over medium-high heat.

    Add the chicken pieces and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Cook for 5 to 6 minutes, stirring occasionally, until golden brown and cooked through. Remove chicken to a plate.

    Add the remaining 1 tablespoon olive oil to the same skillet. Add the onion and bell pepper and cook for 3 to 4 minutes until softened.

    Add the garlic and cook for 30 seconds until fragrant.

    Add the cherry tomatoes, oregano, and basil. Cook for 3 to 4 minutes, stirring occasionally, until tomatoes begin to burst and release their juices.

    Return the chicken to the skillet along with any accumulated juices. Toss everything together and cook for 1 to 2 minutes until heated through.

    Remove from heat. Squeeze the lemon juice over the stir-fry and season with remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper. Toss to combine.

    Sprinkle with chopped parsley and feta cheese if using. Serve immediately.

Spice Tips

For a gentle kick, add 1/4 teaspoon red pepper flakes when you add the garlic in step 4. For deeper flavor, stir in 1/2 teaspoon smoked paprika with the oregano and basil. Fresh mint alongside the parsley adds brightness.

Serve over rice, couscous, or with crusty bread to soak up the tomato juices. For a heartier meal, add sliced zucchini or spinach in step 5. Leftovers keep refrigerated for up to 3 days.
