Weeknight Garlic-Ginger Chicken Stir-Fry
Ingredients

- 3 cupsbroccoli florets

Slice 1.25 pounds chicken breast into bite-sized pieces.

Mince 4 cloves garlic.

Mince 1 tablespoon fresh ginger.

Dice 1 large bell pepper.

Slice 2 green onions, separating white and green parts.
Method

Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat until shimmering, about 1 minute.

Add chicken and cook, stirring occasionally, until golden and cooked through (165°F internal temperature), 6 to 8 minutes. Transfer to a plate.

Add remaining 1 tablespoon oil to the pan. Stir in minced garlic and ginger, cooking for 30 seconds until fragrant.

Add broccoli and bell pepper. Stir-fry over medium-high heat for 4 to 5 minutes until vegetables are tender-crisp.

In a small bowl, whisk together soy sauce, water, cornstarch, and sesame oil.

Return chicken to the pan. Pour in sauce and toss everything to coat. Cook for 1 minute until sauce thickens.

Spice Tips
For a spicy kick, add 1/4 teaspoon red pepper flakes or a dash of sriracha to the sauce. For deeper umami, swap 1 tablespoon of the soy sauce with oyster sauce. A squeeze of fresh lime juice at the end brightens all the flavors.
