Ingredients

  • 1½ cupsold-fashioned oats
  • ½ cupcreamy peanut butter
  • ⅓ cuphoney
  • ½ cupmini chocolate chips
  • 1 teaspoonvanilla extract
  • ⅛ teaspoonsalt

Method

  1. 01

In a medium bowl, combine 1 1/2 cups oats, 1/2 cup peanut butter, 1/3 cup honey, 1/2 cup mini chocolate chips, 1 teaspoon vanilla extract, and 1/8 teaspoon salt. Stir with a wooden spoon until everything is evenly distributed and the mixture holds together when pressed.

  2. 02

Refrigerate the mixture for 15 minutes to firm up slightly for easier rolling.

  3. 03

Using your hands or a small cookie scoop, roll the mixture into 1-inch balls, pressing firmly to compact. You should get about 18-20 bites.

  4. 04

Place the balls on a parchment-lined plate or container. Refrigerate for at least 30 minutes before serving to set completely.

Spice Tips

For a hint of warmth, add 1/4 teaspoon cinnamon to the mixture. A pinch of espresso powder deepens the chocolate flavor without adding coffee taste. For a touch of heat, try a tiny pinch of cayenne alongside the chocolate chips.

Store in an airtight container in the refrigerator for up to 1 week, or freeze for up to 3 months. Substitute almond butter or sunflower seed butter for peanut butter if preferred. Add shredded coconut or chopped nuts for extra texture.
