Quick Beef and Broccoli

Ingredients

  • 1 poundflank steak or sirloin (thinly sliced)
  • 6 cupsbroccoli florets
  • 3 tablespoonsoy sauce
  • 2 tablespoonoyster sauce
  • 1 tablespoonrice vinegar
  • 4 clovesgarlic
  • 1 tablespoonginger (fresh)
  • 1 tablespooncornstarch
  • 3 tablespoonvegetable oil
  • ½ cupwater
  • ½ teaspoonsesame oil

Prep

    Thinly slice 1 pound flank steak or sirloin against the grain.

    Cut broccoli into florets (about 6 cups).

    Mince 4 cloves garlic and mince 1 tablespoon fresh ginger.

Method

    Heat 1 1/2 tablespoons vegetable oil in a large skillet or wok over high heat until shimmering, about 1 minute.

    Add the sliced beef in a single layer and cook without stirring for 2 minutes until browned, then stir and cook 1-2 minutes more until cooked through. Transfer to a plate.

    Add remaining 1 1/2 tablespoons oil to the pan and heat for 30 seconds.

    Add broccoli florets and cook, stirring occasionally, for 4-5 minutes until tender-crisp.

    Stir in the minced garlic and ginger and cook for 1 minute until fragrant.

    In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, cornstarch, and water. Pour into the pan.

    Return beef to the pan and cook for 2-3 minutes, stirring constantly, until the sauce thickens and coats everything.

    Drizzle with sesame oil, stir once, and serve immediately.

Spice Tips

For more heat, add 1/2 teaspoon red pepper flakes or a pinch of cayenne to the sauce. For a touch of umami depth, stir in 1/2 teaspoon more oyster sauce.

For extra tenderness, toss the sliced beef with 1 teaspoon cornstarch and 1 teaspoon soy sauce before cooking. Serve over steamed white or brown rice.
