Chipotle Beef Burrito Bowl
Ingredients
- 1 poundground beef
- 1 cupwhite rice
- 1 can (15 oz)black beans
- 1 cupcherry tomatoes
- 4 cupsromaine lettuce
- 1 cupcheddar cheese
- ½ cupsour cream
- 1lime
- 1 tablespoonolive oil
- 2chipotle peppers in adobo
- 1 teaspoongarlic powder
- 1 teaspooncumin
- 1 teaspoonchili powder
- ½ teaspoonsalt
- ¼ teaspoonblack pepper

Cook 1 cup white rice according to package directions.

Heat 1 tablespoon olive oil in a large skillet over medium-high heat.

Add 1 pound ground beef to the skillet and cook, breaking it up with a wooden spoon, until browned, about 5 to 6 minutes.

Add the minced chipotle peppers, 1 teaspoon garlic powder, 1 teaspoon cumin, 1 teaspoon chili powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper to the beef. Stir well and cook for 2 minutes until fragrant.

Drain and rinse the black beans, then add them to the skillet with the beef. Cook for 2 to 3 minutes until heated through.

Divide the cooked rice between two bowls as the base.

Top each bowl with half the chipotle beef and bean mixture, shredded lettuce, halved cherry tomatoes, and shredded cheddar cheese.

Add a dollop of sour cream to each bowl and squeeze fresh lime juice over the top before serving.
Spice Tips
The chipotle peppers give a smoky, moderate heat. For more fire, add an extra chipotle or stir in 1/4 teaspoon cayenne with the spices. For milder heat, use just 1 chipotle pepper or substitute 1 teaspoon smoked paprika instead. Fresh cilantro and a squeeze of extra lime brighten every bite.
Make it ahead: cook the beef mixture up to 3 days in advance and reheat when ready to assemble. For extra toppings, add sliced avocado, pickled jalapeños, or salsa. Swap brown rice for white rice for added fiber.
