Crispy Chickpea & Kale Skillet with Warm Tahini Drizzle

Ingredients

  • 3 tablespoonextra-virgin olive oil
  • 1yellow onion
  • 3 clovegarlic
  • 6 ouncekale
  • 1 can (15 oz)canned chickpeas (drained and rinsed)
  • ½ teaspoonsmoked paprika
  • ½ teaspooncumin
  • ·salt
  • ·black pepper
  • 3 tablespoontahini
  • 1lemon
  • 3 tablespoonwarm water
  • ¼ cuppomegranate arils or dried cranberries

Prep

    Dice 1 yellow onion.

    Mince 3 cloves garlic.

    Tear or chop 6 ounces kale into bite-sized pieces, discarding tough stems.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat.

    Add the diced onion and sauté for 3–4 minutes until softened and lightly golden.

    Stir in the minced garlic and cook for 1 minute until fragrant.

    Add the torn kale and cook, stirring occasionally, for 4–5 minutes until wilted and tender.

    Push the kale mixture to the side of the skillet. Add the remaining 1 tablespoon olive oil to the empty side.

    Add the drained chickpeas, paprika, and cumin to the oil. Cook for 4–5 minutes, stirring occasionally, until the chickpeas are golden and crispy.

    Toss everything together and season with salt and pepper to taste.

    While the chickpeas cook, whisk together the tahini, juice from 1 lemon, and 3 tablespoons warm water in a small bowl until smooth and pourable. Season with salt and pepper.

    Transfer the skillet to a serving dish or bowls. Drizzle generously with the tahini sauce and scatter pomegranate arils over the top.

Spice Tips

For deeper warmth, add 1/4 teaspoon cayenne or a pinch of red pepper flakes to the chickpeas. A teaspoon of sumac sprinkled over the finished dish brightens the tahini's earthiness. Fresh cilantro or parsley stirred in at the end adds herbaceous lift.

Make the tahini sauce ahead if you like — it keeps refrigerated for up to 5 days and can be thinned with more water when ready to serve. Pomegranate arils add a pop of tartness and crunch; substitute dried cranberries, raisins, or toasted pumpkin seeds if you prefer.
