Black Beans with Lime and Fresh Cilantro

Ingredients

  • 2 cans (15 oz each)black beans (or cooked dried)
  • 2lime
  • ½ mediumred onion
  • 1jalapeño
  • ¼ cupcilantro (packed)
  • 2 clovesgarlic
  • 2 tablespoonolive oil
  • ·salt
  • ·black pepper

Prep

    Mince 2 garlic cloves.

    Dice 0.5 medium red onion into small pieces.

    Dice 1 jalapeño (remove seeds if you prefer less heat).

    Chop 0.25 cup fresh cilantro.

Method

    Drain and rinse the black beans in a colander until the water runs clear.

    Transfer beans to a medium bowl. Add the minced garlic, diced red onion, and diced jalapeño.

    Pour in the olive oil and juice from both limes. Season with salt and pepper to taste.

  4. 04

    Stir gently to combine. Taste and adjust lime juice or salt as needed.

    Top with fresh cilantro just before serving. Serve at room temperature or chilled.

Spice Tips

For extra heat, add a pinch of cayenne pepper or red pepper flakes. For smokiness, try a small pinch of cumin. A splash of hot sauce stirred in at the end also works beautifully.

This keeps well refrigerated for up to 3 days. Serve on its own, over rice, with tortilla chips as a dip, or alongside grilled fish or chicken. You can prepare it up to 8 hours ahead; add the cilantro right before serving to keep it fresh and bright.
