Cilantro-Lime Chicken with Charred Onions
Ingredients
- 4chicken breasts (about 6 ounces each)
- 3lime
- ·cilantro
- 4 clovesgarlic
- 2 mediumyellow onion
- 3 tablespoonolive oil

Prep

Juice 3 limes.
- 02
Roughly chop a large handful of cilantro.

Mince 4 cloves garlic.

Slice 2 medium yellow onions into thick wedges.
Method

Heat 1 1/2 tablespoons olive oil in a large skillet over medium-high heat.

Season the chicken breasts on both sides with salt and pepper. Add them to the hot skillet and cook for 6–7 minutes per side, until golden and cooked through (internal temp 165°F). Transfer to a plate.

In the same skillet, add the remaining 1 1/2 tablespoons olive oil. Add the charred onion pieces and cook over medium-high heat for 3–4 minutes, stirring occasionally, until edges are caramelized. Season with salt and pepper.

Pour the lime juice over the onions and scrape up any browned bits from the pan. Add the minced garlic and cook for 1 minute until fragrant.

Return the chicken to the skillet, spoon the cilantro-lime sauce and onions over top, and toss gently to coat. Serve immediately.
Spice Tips
For a subtle kick, add 1/4 teaspoon cayenne pepper when you cook the garlic. For more heat, include 1 fresh jalapeño, minced, in the final sauce. A pinch of cumin adds warmth without spice.
Serve over white rice, with lime wedges on the side. Leftovers keep refrigerated for up to 3 days and reheat well.
