Honey-Garlic Carrots with Crispy Shallots

Ingredients

  • 1½ poundscarrots
  • 3shallots
  • 4 clovesgarlic
  • 3 tablespoonolive oil
  • 2 tablespoonhoney
  • 1 tablespoonbalsamic vinegar
  • ·thyme (fresh)
  • ·salt
  • ·black pepper

Prep

    Slice 1.5 pounds carrots into thin rounds (about 1/4 inch thick).

    Slice 3 shallots into thin rings.

    Mince 4 cloves garlic.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat.

    Add the sliced shallots and cook for 3-4 minutes, stirring occasionally, until golden and crispy. Transfer to a paper towel-lined plate and set aside.

    In the same skillet, add the remaining 1 tablespoon olive oil and the carrot slices. Cook for 5-6 minutes, stirring occasionally, until carrots begin to soften and develop light browning.

    Add minced garlic and fresh thyme to the pan. Stir and cook for 1 minute until fragrant.

    Drizzle honey and balsamic vinegar over the carrots. Toss to coat evenly. Cook for another 2-3 minutes until carrots are tender and the sauce thickens slightly.

    Season with salt and black pepper to taste. Top with crispy shallots and serve immediately.

Spice Tips

For warmth, add a pinch of red pepper flakes when you add the garlic. A touch of Dijon mustard stirred in at the end adds tangy depth. Fresh parsley or mint scattered on top adds brightness.
