Honey-Ginger Roasted Carrots with Lime & Crispy Shallots

Ingredients

  • 1½ poundscarrots
  • 3shallots
  • 2 tablespoonhoney
  • 1 tablespoonfresh ginger
  • 1lime
  • 3 tablespoonolive oil
  • ·salt
  • ·black pepper
  • ·cilantro

Prep

    Cut carrots into 2-inch batons or thick coins.

    Slice 3 shallots into thin rings.

  3. 03

    Mince 1 tablespoon fresh ginger.

    Cut 1 lime in half for juicing.

Method

    Preheat oven to 425°F.

    Toss carrots with 2 tablespoons olive oil, salt, and pepper on a large baking sheet. Spread in a single layer and roast for 15 minutes.

    Meanwhile, heat remaining 1 tablespoon olive oil in a small skillet over medium heat. Add shallots and cook, stirring often, for 5–7 minutes until golden and crispy. Transfer to a paper towel to cool and crisp further.

    Whisk honey, ginger, and juice from 1 lime in a small bowl.

    After carrots have roasted 15 minutes, remove from oven, drizzle with honey-ginger mixture, and toss to coat. Return to oven for another 8–10 minutes, until carrots are tender and edges are caramelized.

    Transfer to a serving dish, scatter crispy shallots and cilantro on top, and serve warm or at room temperature.

Spice Tips

For warmth, add a pinch of cayenne pepper or red pepper flakes to the honey-ginger mixture. A small pinch of smoked paprika adds depth. Fresh mint or basil can stand in for cilantro if you prefer.
