  • 4 clovesgarlic
  • 2 tablespoonshoney
  • 2 teaspoonsfresh thyme (or 1 teaspoon dried)

Prep

    Slice 1 1/2 pounds carrots into 1/4-inch rounds or thin sticks.

    Mince 4 cloves garlic.

Method

    Heat olive oil in a large skillet over medium-high heat.

    Add the sliced carrots and cook for 5 minutes, stirring occasionally, until they begin to soften.

    Add the minced garlic and thyme, stirring constantly for about 1 minute until fragrant.

    Drizzle honey over the carrots, season with salt and pepper to taste, and stir well to coat.

Spice Tips

For warmth, add a pinch of smoked paprika or cumin in step 3. A tiny pinch of red pepper flakes adds gentle heat. A squeeze of fresh lemon juice in step 5 brightens the dish.
