Crispy Cauliflower with Garlic, Lemon & Thyme
Ingredients
- 1 headcauliflower (about 1.5 pounds)
- 3 tablespoonolive oil
- 4 clovesgarlic
- 2 teaspoonfresh thyme
- 1lemon
- ½ teaspoonsalt
- ¼ teaspoonblack pepper
- ⅛ teaspoonred pepper flakes (optional)

Cut 1 head of cauliflower into florets about 1.5 inches across.

Mince 4 cloves garlic.
Method

Heat olive oil in a large skillet over medium-high heat for 1 minute.

Add cauliflower florets and cook without stirring for 4 minutes, until the bottoms turn golden brown.

Stir the cauliflower, then add minced garlic and thyme. Cook for 2 minutes, stirring occasionally.

Season with salt, black pepper, and red pepper flakes if using. Cook for another 3–4 minutes, stirring gently, until the cauliflower is tender and charred in spots.

Squeeze the lemon over the pan, toss to coat, and serve immediately.
Spice Tips
Add more red pepper flakes for heat, or finish with a pinch of smoked paprika for depth. A handful of fresh parsley scattered on top brightens the dish.
