Skillet Chicken and White Beans with Garlic Breadcrumbs

Ingredients

  • 1½ poundschicken breast
  • 3 tablespoonolive oil
  • 4 clovegarlic
  • 1 mediumyellow onion
  • 2 15-ounce cancanned white beans
  • 1 cupchicken broth
  • 2 sprigfresh rosemary
  • ·salt
  • ·black pepper
  • ½ cuppanko breadcrumbs
  • 1 wholefresh lemon
  • ¼ cupparmesan cheese

Prep

    Dice 1 medium yellow onion.

    Mince 4 cloves garlic.

    Grate 1/4 cup parmesan cheese.

    Drain and rinse 2 cans white beans.

Method

    Pat the chicken dry with paper towels and season generously with salt and pepper on both sides.

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Once shimmering, add the chicken and sear 5 to 6 minutes per side until golden brown. Transfer to a plate.

    Add the remaining 1 tablespoon olive oil to the skillet. Add the diced onion and cook 3 to 4 minutes until softened, stirring occasionally. Add the minced garlic and cook 1 minute more until fragrant.

    Pour in the chicken broth, scraping up any browned bits from the bottom. Add the drained beans and rosemary sprigs. Return the chicken to the skillet, nestling it among the beans.

    Reduce heat to medium-low, cover partially, and simmer 12 to 15 minutes until the chicken reaches an internal temperature of 165°F.

    While the chicken finishes, toss the panko with 1 tablespoon olive oil, salt, and pepper in a small bowl. Toast in a dry skillet over medium heat 2 to 3 minutes, stirring frequently, until golden. Stir in the grated parmesan.

    Remove the rosemary sprigs from the skillet. Squeeze the lemon over the beans and chicken, taste, and adjust salt and pepper. Divide between bowls and top with the garlic breadcrumb mixture.

Spice Tips

For warmth, stir in 1/2 teaspoon smoked paprika with the garlic. For heat, add a pinch of red pepper flakes at the end. Fresh thyme or sage works beautifully in place of rosemary if that's what you have.

Make ahead: prep the onion and garlic in the morning if you like. This is best served right from the skillet. Leftovers reheat gently on the stovetop with a splash of water.
