Cottage Cheese Pancakes with Caramelized Apples
Ingredients
- 1 cupcottage cheese
- 2eggs
- ⅓ cupall-purpose flour
- 2 tablespoonsugar
- ½ teaspoonvanilla extract

Blend cottage cheese and eggs in a blender or food processor until completely smooth, about 1 minute.

Pour blended mixture into a bowl. Whisk in flour, sugar, vanilla, baking powder, and salt until just combined—a few lumps are fine.

Melt 1 tablespoon butter in a large skillet over medium heat. Working in batches, drop batter by 1/4 cup portions onto the skillet. Cook 2–3 minutes per side until golden brown. Transfer to a plate and tent loosely with foil to keep warm. Repeat with remaining batter.

In the same skillet, melt remaining 2 tablespoons butter over medium-high heat. Add diced apples and cinnamon. Cook, stirring occasionally, for 5–7 minutes until the apples soften and edges turn golden brown.

Top warm pancakes with caramelized apples and any butter from the pan. Serve immediately.
