Crispy Cottage Cheese Skillet with Tomatoes and Spinach
Ingredients
- 1½ cupscottage cheese
- 2 tablespoonsolive oil

- 1½ cupscherry tomatoes
- 4 cupsfresh spinach

Mince 3 garlic cloves.

Halve 1.5 cups cherry tomatoes.

Wash and roughly chop 4 cups fresh spinach.

Cut 1 lemon into wedges.
Method

Heat olive oil in a large skillet over medium-high heat. Add garlic and cook for 30 seconds until fragrant.

Add cherry tomatoes and cook for 3 minutes, stirring occasionally, until they begin to blister and soften.

Stir in spinach in batches until wilted, about 2 minutes total.

Reduce heat to medium. Add cottage cheese by spoonfuls directly into the pan, gently folding it into the tomato-spinach mixture for 2 to 3 minutes. Do not stir vigorously; let some curds stay slightly chunky and toast lightly on the bottom.

Season with salt, black pepper, and red pepper flakes. Squeeze fresh lemon juice over the top.

Top with parmesan if using. Serve warm directly from the skillet.
Spice Tips
For warmth, double the red pepper flakes or add a small pinch of smoked paprika. For herbaceous depth, tear fresh basil or dill over the top just before serving. A splash of hot sauce (Frank's or sriracha) also works beautifully if you like heat.
