Chorizo-Cream Cheese Skillet Dip with Crispy Tortilla Chips

Ingredients

  • 8 ounceschorizo (Mexican-style, bulk or casing removed)
  • 8 ouncescream cheese
  • 1 cupsharp cheddar cheese (shredded)
  • 2 mediumjalapeños
  • 2 clovesgarlic
  • 1lime
  • ¼ cupcilantro (packed)
  • 1 bagtortilla chips (for serving)

Prep

    Dice 2 medium jalapeños, removing seeds if you prefer less heat.

    Mince 2 cloves garlic.

    Chop roughly 1/4 cup cilantro.

Method

    Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat. Add the chorizo and cook, breaking it apart with a spoon, until browned and cooked through, about 5–7 minutes. Drain any excess fat if needed.

    Reduce heat to medium. Add the cream cheese to the pan and stir until it begins to melt and combine with the chorizo, about 2 minutes.

    Stir in the cheddar cheese until fully melted and smooth. The dip should be warm and bubbling at the edges.

    Remove from heat. Stir in the diced jalapeños, minced garlic, a squeeze of lime juice, and cilantro. Taste and season with a pinch of salt and black pepper if needed.

    Transfer to a serving bowl or serve straight from the skillet. Serve hot with tortilla chips.

Spice Tips

For extra kick, keep the jalapeño seeds and add them to taste. A pinch of cayenne pepper stirred in after cooking adds smoky heat without overpowering the cheese. For milder crowds, reduce the jalapeños to 1 pepper or omit them entirely and let guests add hot sauce at the table.
