Ingredients

  • 1 poundground beef
  • ·yellow onion
  • ·garlic
  • ·fresh spinach
  • 4 ouncecream cheese
  • ¾ cupbeef broth
  • ·salt
  • ·black pepper
  • ·red pepper flakes

Prep

  1. 01

    Dice 1 yellow onion

  2. 02

    Mince 3 garlic cloves

Method

  1. 01

Heat a large skillet over medium-high heat. Add 1 pound ground beef and cook, breaking it apart with a spoon, until no pink remains, about 5 minutes. Drain excess fat if needed.

  2. 02

Add 1 diced yellow onion and 3 minced garlic cloves to the beef. Stir and cook for 2 minutes until fragrant.

  3. 03

Pour in 3/4 cup beef broth and bring to a simmer. Cut 4 ounces cream cheese into small cubes and stir into the broth until melted and smooth, about 1 minute.

  4. 04

Add 4 cups fresh spinach (loosely packed) and stir until wilted, about 2 minutes.

  5. 05

Season to taste with salt, black pepper, and a pinch of red pepper flakes. Serve hot.

Spice Tips

For warmth, add 1/4 teaspoon cayenne pepper or a few red pepper flakes to the broth. A squeeze of fresh lemon juice at the end brightens the flavors. For a smoky note, try 1/4 teaspoon smoked paprika.

Serve over pasta, rice, or with crusty bread to soak up the creamy sauce. Leftovers keep refrigerated for up to 3 days.
