Pan-Seared Salmon with Creamy Dill Mashed Potatoes and Roasted Broccoli

Ingredients

  • 4 fillets (6 oz each)salmon fillets (skin-on)
  • 1½ lbrusset potatoes
  • 4 tablespoonbutter
  • ½ cupwhole milk
  • 2 tablespoonfresh dill
  • 1 lbbroccoli
  • 3 tablespoonolive oil
  • 1 teaspoonsalt
  • ½ teaspoonblack pepper
  • 2 clovesgarlic
  • 1 wholelemon

    Peel 1.5 lb russet potatoes and cut into 1-inch chunks.

    Cut 1 lb broccoli into florets.

    Mince 2 cloves garlic.

    Chop 2 tablespoons fresh dill.

    Cut 1 lemon into wedges.

Method

    Peel and cut potatoes into 1-inch chunks. Place in a large pot, cover with cold salted water, and bring to a boil. Simmer for 12–15 minutes until very tender and easily pierced with a fork. Drain well.

    While potatoes cook, toss broccoli florets with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast at 425°F for 15–18 minutes, stirring halfway, until crispy at the edges.

    Pat salmon fillets dry with paper towels and season both sides generously with salt and pepper.

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. When shimmering, carefully place salmon skin-side up in the pan. Cook for 4–5 minutes without moving—the skin should crisp and release easily. Flip and cook skin-side down for another 2–3 minutes until just cooked through (a fork should flake the flesh easily).

    Return drained potatoes to the warm pot. Add 3 tablespoons butter, 1/2 cup milk, minced garlic, and fresh dill. Mash until creamy and smooth (leave some small lumps if you prefer texture). Taste and adjust salt and pepper.

    Divide mashed potatoes among plates, top with a salmon fillet, and serve alongside roasted broccoli. Squeeze fresh lemon over everything.

Spice Tips

For warmth and depth, add 1/2 teaspoon smoked paprika to the roasted broccoli before cooking, or finish the salmon with a pinch of cayenne. A crack of fresh black pepper on the mashed potatoes adds pleasant bite.

Salmon cooks quickly—don't walk away from the pan. If your fillets are thicker than 1 inch, give them an extra minute on each side. The recipe easily halves for two people.
