Pan-Seared Salmon with Herb Butter and Charred Lemon

Ingredients

  • 4 ouncessalmon fillet (skin-on)
  • 2 tablespoonbutter
  • 1 tablespoonfresh dill
  • 1 tablespoonfresh parsley
  • 1 clovegarlic
  • ½lemon
  • ¼ teaspoonsea salt
  • ⅛ teaspoonblack pepper
  • 1 teaspoonolive oil

Prep

    Mince 1 garlic clove.

    Chop about 1 tablespoon fresh dill.

    Chop about 1 tablespoon fresh parsley.

Method

    Pat the salmon fillet dry with a paper towel. Season the skin side lightly with salt and pepper.

    Heat olive oil in a large skillet over medium-high heat until shimmering, about 1 minute.

    Place salmon skin-side down in the pan. Cook for 4 to 5 minutes without moving, until the skin is crispy and golden.

    Flip the salmon and cook for another 2 to 3 minutes, until the flesh is just cooked through and opaque.

    Transfer salmon to a plate. Reduce heat to low and add the butter to the pan, swirling to melt. Add the minced garlic and cook for 30 seconds until fragrant.

    Stir in the chopped dill and parsley. Pour the herb butter over the salmon.

    Place the lemon half cut-side down in the same skillet and cook for 2 minutes until lightly charred. Serve alongside the salmon.

Spice Tips

For subtle heat, add a pinch of red pepper flakes to the herb butter. A touch of Dijon mustard in the butter adds brightness. Fresh tarragon or chives work beautifully in place of dill or parsley.
