Creamy Scrambled Eggs with Sautéed Mushrooms on Toast

Ingredients

  • 6eggs
  • 2 tablespoonbutter
  • 8 ouncemushrooms (cremini or baby bella)
  • ½yellow onion
  • 2 clovegarlic
  • 1 teaspoonfresh thyme (or 1/4 teaspoon dried)
  • 3 tablespoonheavy cream
  • ·salt
  • ·black pepper
  • 4 slicebread (sturdy white, wheat, or sourdough)

Prep

    Slice 8 ounces mushrooms into 1/2-inch-thick pieces.

    Dice 1/2 yellow onion into small pieces.

    Mince 2 cloves garlic.

Method

    Heat 1 tablespoon butter in a large skillet over medium-high heat. Add the mushrooms and cook without stirring for 3 minutes until golden on one side, then stir and cook another 3–4 minutes until tender and lightly browned. Transfer to a plate.

    In the same skillet, add the remaining 1 tablespoon butter and sauté the diced onion for 2 minutes until softened. Add the minced garlic and thyme, cook for another 30 seconds until fragrant, then return the mushrooms to the skillet. Toss to combine and season with a pinch of salt and pepper. Keep warm on low heat.

    Whisk the 6 eggs with the heavy cream, 1/4 teaspoon salt, and a few grinds of black pepper until well blended.

    Pour the egg mixture into a separate medium saucepan over low heat. Stir slowly and constantly with a rubber spatula for 6–8 minutes, scraping the bottom and sides, until the eggs are creamy and just set (slightly loose curds are ideal). Remove from heat while still slightly wet — carryover heat will finish them.

    Toast the 4 slices of bread until golden. Divide among plates, top with the creamy eggs, then spoon the mushroom mixture over the top. Serve warm.

Spice Tips

For subtle earthiness, add a pinch of nutmeg to the eggs. A small splash of sherry or cognac in the mushrooms deepens their savory flavor. For brightness, finish with a squeeze of fresh lemon juice and a shower of fresh chives.

For a richer version, stir 2 tablespoons grated Gruyère or Parmesan into the eggs just before they finish cooking. The eggs cook gently over low heat — don't rush this step or they'll become rubbery.
