Crispy Eggs Over Garlicky Mushrooms

Ingredients

  • 1 poundmushrooms (cremini or baby bella)
  • 4 clovesgarlic
  • 3 tablespoonbutter
  • ·salt
  • ·black pepper
  • 2 sprigsfresh thyme (or 1/2 teaspoon dried)
  • 4eggs
  • 4 slicescrusty bread (for serving)

Prep

    Slice 1 pound mushrooms into 1/4-inch slabs.

    Mince 4 garlic cloves.

Method

    Melt 2 tablespoons butter in a large skillet over medium-high heat.

    Add mushrooms in a single layer. Don't stir for 3-4 minutes — let them brown on one side. Then stir and cook another 3-4 minutes until golden and tender. Season with salt and pepper.

    Push mushrooms to the edges of the pan. Add remaining 1 tablespoon butter to the center, then add minced garlic and thyme. Cook for 30 seconds until fragrant.

    Make 4 small wells in the mushroom mixture. Crack an egg into each well.

    Cover the pan with a lid or foil and reduce heat to medium. Cook for 4-5 minutes, until egg whites are set and yolks still jiggle.

    Divide between bowls or plates. Serve with crusty bread.

Spice Tips

Finish with a pinch of red pepper flakes for subtle heat, or a drizzle of hot sauce on the side. A scatter of fresh chives or parsley adds brightness.

Serves 4 as a light supper, or 2 as a hearty breakfast for dinner. Substitute olive oil for butter if preferred.
