Ingredients

  • 1 poundgnocchi
  • 4 tablespoonunsalted butter
  • 12 leavesfresh sage
  • 3garlic cloves
  • ½ cupparmesan cheese
  • ·kosher salt
  • ·black pepper
  • ·lemon

Method

  1. 01

Bring a large pot of salted water to a boil. Add gnocchi and stir gently. Cook until they float, then continue for 1-2 minutes more. Drain well and set aside.

  2. 02

In a large skillet, melt butter over medium heat. Add sage leaves and 3 minced garlic cloves. Swirl constantly for 2-3 minutes until the butter turns golden brown and smells nutty; watch carefully so it doesn't burn.

  3. 03

Increase heat to medium-high. Add the drained gnocchi to the brown butter and sage. Cook, stirring occasionally, for 4-5 minutes until the gnocchi are golden and crispy on the edges.

  4. 04

Remove from heat. Toss with 1/2 cup grated parmesan, a squeeze of fresh lemon juice, and a pinch each of salt and pepper. Taste and adjust seasoning. Serve immediately.

Spice Tips

This dish is mild and buttery by design. To add warmth, finish with a pinch of red pepper flakes when tossing with parmesan. A grind of black pepper also deepens the savory notes without heat.
