Gnocchi with Brown Butter, Sage & Crispy Prosciutto

Ingredients

  • 1 poundgnocchi
  • 4 ounceprosciutto (thinly sliced)
  • 4 tablespoonbutter
  • 12fresh sage leaves
  • 1lemon
  • 2 ounceparmesan cheese
  • ·salt
  • ·black pepper

Method

    Bring a large pot of salted water to a boil.

    While water heats, arrange prosciutto on a baking sheet in a single layer. Bake at 400°F for 8–10 minutes until crispy. Remove and let cool on paper towels, then break into bite-sized pieces.

    Add gnocchi to boiling water and cook until they float to the surface, then 1–2 minutes more. Drain and set aside.

    In a large skillet over medium heat, melt butter with sage leaves. Swirl and cook for 3–4 minutes until the butter turns golden brown and smells nutty; watch carefully so it doesn't burn.

    Add cooked gnocchi to the brown butter and toss gently to coat. Season with salt and pepper to taste.

    Divide among bowls. Top with crispy prosciutto, a squeeze of fresh lemon juice, and a shaving of parmesan. Serve immediately.

Make ahead: Cook and crisp the prosciutto up to 1 hour before serving. The brown butter should be made just before plating for best flavor.
