  • 4 tablespoonbutter
  • 4 clovegarlic
  • 12 leaffresh sage
  • 1lemon
  • ½ cupvegetable broth
  • ½ cupparmesan cheese
  • ·salt
  • ·black pepper

Prep

  1. 01

    Mince 4 cloves garlic

  2. 02

Juice 1 lemon (you need about 2–3 tablespoons)

  3. 03

    Grate 1/2 cup parmesan cheese

Method

  1. 01

Bring a large pot of salted water to a boil. Add gnocchi and cook until they float to the surface and stay there for 1 minute, about 3–4 minutes total. Drain and set aside.

  2. 02

In a large skillet, melt butter over medium heat. Add minced garlic and sage leaves, stirring until fragrant and the sage is crispy, about 2 minutes.

  3. 03

Pour in vegetable broth and bring to a gentle simmer. Add the cooked gnocchi and toss to coat, 1–2 minutes.

  4. 04

Remove from heat. Squeeze in the juice of 1 lemon, add 1/2 cup grated parmesan, and toss until creamy. Season with salt and pepper to taste.

  5. 05

Divide between bowls and serve immediately with a lemon wedge on the side.

Spice Tips

For deeper warmth, add a pinch of red pepper flakes to the butter and garlic. A whisper of nutmeg brightens the finish without overwhelming the lemon.

For a protein boost, top with a fried egg or crumbled pancetta. You can swap the sage for fresh basil or parsley if preferred.
