Crispy Green Beans with Garlic, Chili & Lime
Ingredients
- 1 poundgreen beans
- 3 tablespoonvegetable oil
- 6 clovesgarlic
- ½ teaspoonred pepper flakes
- 2 tablespoonsoy sauce
- 1lime
- 1 teaspoonsesame oil
- ¼ teaspoonsea salt
Prep
- 01
Trim the ends off 1 pound of green beans.
- 02
Mince 6 cloves garlic.
- 03
Cut 1 lime into wedges for juicing.
Method
- 01
Heat 3 tablespoons vegetable oil in a large skillet over medium-high heat until shimmering, about 1 minute.
- 02
Add the green beans in a single layer (work in batches if needed). Let them sit undisturbed for 3 minutes to blister and char, then toss and cook for another 2 to 3 minutes until they have spotty browning and are tender-crisp.
- 03
Push the green beans to the sides of the skillet. Add minced garlic and red pepper flakes to the center, stirring constantly for 30 seconds until fragrant.
- 04
Toss everything together. Pour in the soy sauce and cook for 1 minute, stirring often.
- 05
Remove from heat. Drizzle with sesame oil and squeeze in fresh lime juice. Sprinkle with sea salt and toss well. Taste and adjust seasoning as needed.
- 06
Transfer to a serving dish and serve immediately while hot and crispy.
Spice Tips
For more heat, add up to 1 teaspoon red pepper flakes or a pinch of cayenne pepper. For less heat, reduce the red pepper flakes to a pinch. A sprinkle of toasted sesame seeds or a handful of fresh cilantro adds welcome brightness and texture.
Serves 4 as a side dish. The green beans can be prepped up to 4 hours ahead and stored in the fridge. The dish is best served immediately after cooking to maintain crispness.
