Green Beans with Crispy Shallots and Garlic

Ingredients

  • 1½ poundsgreen beans
  • 3shallots
  • 4 clovesgarlic
  • 3 tablespoonsolive oil
  • ·salt
  • ·black pepper
  • 2 tablespoonsbutter
  • ½lemon

Prep

    Trim green beans by snapping off the ends.

    Slice 3 shallots into thin rings.

    Mince 4 cloves garlic.

Method

    Bring a large pot of salted water to a boil.

    Add green beans and cook for 4–5 minutes until tender-crisp. Drain and set aside.

    While the beans cook, heat 2 tablespoons olive oil in a large skillet over medium heat. Add sliced shallots and cook, stirring occasionally, for 6–8 minutes until golden and crispy. Transfer shallots to a paper towel and sprinkle lightly with salt.

    In the same skillet, add the remaining 1 tablespoon olive oil and minced garlic. Cook for 1 minute until fragrant—don't let it brown.

    Add the drained green beans back to the skillet along with the butter. Toss gently over medium heat for 2 minutes until the beans are coated and warmed through.

    Squeeze in juice from the lemon half, season with salt and pepper to taste, and top with the crispy shallots. Serve immediately.

Spice Tips

For depth, add ¼ teaspoon red pepper flakes with the garlic. A pinch of thyme or a splash of balsamic vinegar just before serving adds earthy richness. If you like heat, finish with a small pinch of cayenne.
