Green Beans with Garlic, Lemon & Crispy Panko

- 4 clovesgarlic

- ⅓ cuppanko breadcrumbs

Prep

Trim both ends from 1.5 pounds green beans.

Mince 4 cloves garlic.

Zest and halve 1 lemon for squeezing.
Method

Bring a large pot of salted water to a boil. Add green beans and cook for 4–5 minutes until tender-crisp. Drain and set aside.

In a large skillet, heat 2 tablespoons olive oil over medium heat. Add minced garlic and cook for 30 seconds until fragrant, then add the blanched green beans. Toss to coat and warm through, about 2 minutes.

In a small bowl, stir panko with 1 tablespoon olive oil, a pinch of salt, and black pepper. Toast in a dry skillet over medium heat for 2–3 minutes, stirring often, until golden and crispy.

Transfer green beans to a serving plate. Top with crispy panko, squeeze fresh lemon juice over everything, and finish with a pinch of sea salt. Serve warm.
Spice Tips
For a subtle heat, add a pinch of red pepper flakes when cooking the garlic. A touch of Dijon mustard mixed into the warm green beans adds tangy depth.
This dish is best served immediately while the panko is still crispy. For a protein boost, toss in white beans or chickpeas during the final warm-through.
