Beef and Bean Skillet with Cilantro Lime
Ingredients
- 1 poundground beef
- ·yellow onion
- ·garlic
- 2 cans (15 oz each)canned black beans
- 1 can (10 oz)diced tomatoes with green chiles
- 2 tablespoonsolive oil
- 1 teaspooncumin
- ½ teaspoonsmoked paprika
- ·lime
- ·fresh cilantro
- ·kosher salt
- ·black pepper
Prep

Dice 1 medium yellow onion.

Mince 2 cloves garlic.

Drain 2 cans black beans. Chop a small handful of fresh cilantro.
Method

Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 3 to 4 minutes until softened.

Add the minced garlic and cook for 30 seconds until fragrant. Add the ground beef and cook, breaking it apart with a spoon, for 5 to 7 minutes until browned. Drain excess fat if needed.

Stir in 1 teaspoon cumin and 1/2 teaspoon smoked paprika. Cook for 1 minute.

Add the drained black beans and the can of diced tomatoes with green chiles (with liquid). Stir well. Simmer for 5 to 7 minutes until heated through and flavors meld.

Squeeze the lime juice over the skillet. Taste and adjust salt and pepper. Top with chopped cilantro and serve.
Spice Tips
For warmth, add 1/4 teaspoon cayenne pepper or a pinch of red pepper flakes when you add the cumin. For extra brightness, stir in 1/2 teaspoon of cumin after cooking if you like deeper earthiness. Serve with a dollop of sour cream or crumbled cotija cheese for richness.
