Chipotle Beef and Black Bean Skillet with Crispy Corn

- 1 can (15 oz)black beans
- 1 cupcorn (frozen or fresh)
- 1 can (14.5 oz)diced tomatoes
- 1chipotle pepper in adobo sauce

Dice 1 medium yellow onion.

Mince 2 cloves garlic.

Mince 1 chipotle pepper from the can.

Drain and rinse the can of black beans.

Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain excess fat if needed.

Add the diced onion and minced garlic to the beef. Cook, stirring, until softened, about 2-3 minutes.

Stir in 1 teaspoon cumin and cook for 30 seconds until fragrant.

Add the drained black beans, corn, canned diced tomatoes (with their juice), and the minced chipotle pepper. Stir well.
