Chipotle Beef and Black Bean Skillet with Crispy Corn

Ingredients

  • 1 poundground beef
  • ·yellow onion
  • ·garlic
  • 1 can (15 oz)black beans
  • 1 cupcorn (frozen or fresh)
  • 1 can (14.5 oz)diced tomatoes
  • 1chipotle pepper in adobo sauce
  • 2 tablespoonolive oil
  • 1 teaspooncumin
  • ·salt
  • ·black pepper
  • ·lime
  • ·cilantro (optional, for garnish)

Prep

    Dice 1 medium yellow onion.

    Mince 2 cloves garlic.

    Mince 1 chipotle pepper from the can.

    Drain and rinse the can of black beans.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain excess fat if needed.

    Add the diced onion and minced garlic to the beef. Cook, stirring, until softened, about 2-3 minutes.

    Stir in 1 teaspoon cumin and cook for 30 seconds until fragrant.

    Add the drained black beans, corn, canned diced tomatoes (with their juice), and the minced chipotle pepper. Stir well.

    Bring to a gentle simmer and cook uncovered for 8-10 minutes, stirring occasionally, until slightly thickened and flavors meld. Season with salt and black pepper to taste.

    Squeeze juice from 1 lime over the skillet and stir. Taste and adjust seasoning. Top with fresh cilantro if desired and serve hot.

Spice Tips

For deeper heat, add an extra chipotle pepper or a pinch of cayenne. For brightness, stir in fresh cilantro at the end or squeeze extra lime juice. A dash of smoked paprika adds smoky depth without intense spice.
