Cilantro-Lime Beef and Black Bean Skillet

Ingredients

  • 1 poundground beef
  • 2 cans (15 oz each)black beans
  • 1yellow onion
  • 3 clovesgarlic
  • 2lime
  • 1½ cupscherry tomatoes
  • ½ cup (loosely packed)fresh cilantro
  • 2 tablespoonsolive oil
  • 1 teaspooncumin
  • 1 to tastesalt and black pepper
  • ¼ teaspoon (optional)red pepper flakes

Prep

    Dice 1 yellow onion.

    Mince 3 cloves garlic.

  3. 03

    Halve 1.5 cups cherry tomatoes.

    Chop 0.5 cup fresh cilantro.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until no pink remains, about 5 minutes. Drain excess fat if needed.

    Add the diced onion and garlic to the skillet and cook, stirring, for 2 minutes until fragrant.

    Stir in 1 teaspoon cumin and cook for 30 seconds.

    Add the black beans (drained and rinsed) and halved cherry tomatoes. Stir gently and simmer for 3–4 minutes until the tomatoes soften slightly and everything is warmed through.

    Remove from heat. Squeeze the juice of 2 limes over the skillet and stir in most of the cilantro, reserving a small handful for garnish. Season with salt and black pepper to taste.

    Divide into bowls and top with reserved cilantro. Serve as is, over rice, or with warm tortillas.

Spice Tips

For warmth, add 1/2 teaspoon smoked paprika in step 3. For heat, increase red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. A dash of hot sauce stirred in at the end adds bright kick without overwhelming the fresh lime and cilantro.
