Cilantro-Lime Beef & Black Bean Bowls
Ingredients
- 1 poundground beef
- 2 cans (15 oz each)black beans
- ·yellow onion
- ·garlic
- ·lime
- ·cumin
- ·chili powder
- ·salt
- ·black pepper
- ·cilantro
- ·white rice
- ·water
- ·olive oil
Prep

Dice 1 medium yellow onion.
- 02
Mince 2 cloves garlic.
- 03
Juice 1 lime.
- 04
Roughly chop a handful of fresh cilantro for garnish.

Drain and rinse 2 cans black beans.

Cook 1 cup white rice according to package directions.
Method

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 3–4 minutes until softened.

Add the minced garlic and cook for 30 seconds until fragrant.

Add the ground beef and break it into small pieces with a spoon. Cook for 5–6 minutes, stirring occasionally, until browned. Drain excess fat if needed.

Stir in 1 teaspoon cumin and 1/2 teaspoon chili powder. Cook for 30 seconds.

Add the drained and rinsed black beans, 1/4 cup water, and the juice of 1 lime. Simmer for 3–4 minutes until warmed through. Season with salt and pepper to taste.

Serve over cooked white rice and top with fresh cilantro.
Spice Tips
For a little heat, add 1/4 teaspoon cayenne or a pinch of red pepper flakes. For deeper flavor, try 1/4 teaspoon smoked paprika or swap in ancho chili powder instead of regular chili powder.
Serve with lime wedges for extra brightness. Toppings like avocado, diced tomato, or a dollop of sour cream add nice texture.
