Cilantro-Lime Beef & Black Bean Skillet

Ingredients

  • 1 poundground beef
  • 2 15-ounce cansblack beans
  • ·yellow onion
  • ·garlic
  • ·lime
  • 2 tablespoonolive oil
  • 1 teaspooncumin
  • ½ teaspoonchili powder
  • ·salt
  • ·black pepper
  • ·cilantro
  • 1 14.5-ounce candiced tomatoes

Prep

    Dice 1 medium yellow onion.

    Mince 3 cloves garlic.

  3. 03

    Juice 1 lime.

  4. 04

    Chop a small handful of fresh cilantro.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat.

    Add the ground beef and cook for 5–7 minutes, breaking it apart with a spoon, until browned. Drain excess fat if needed.

    Add the diced onion and garlic; stir and cook for 2 minutes until fragrant.

    Stir in 1 teaspoon cumin and 1/2 teaspoon chili powder; cook for 30 seconds.

    Add the drained and rinsed black beans and the canned diced tomatoes (with juices). Stir well.

    Simmer for 5 minutes, stirring occasionally, until flavors meld. Season with salt and pepper to taste.

    Squeeze in the juice of 1 lime and stir in a handful of chopped cilantro. Taste and adjust seasoning.

    Serve hot, garnished with extra cilantro and lime wedges.

Spice Tips

For more warmth, add a pinch of cayenne pepper or diced jalapeño when you add the garlic. A dash of hot sauce stirred in at the end adds personality without overwhelming the bright lime and cilantro.

Serve over rice, with tortillas, or in a bowl with a fried egg on top. Leftovers keep for 3 days refrigerated.
