Cilantro-Lime Ground Beef and Black Bean Bowls
Ingredients
- 1 poundground beef
- 2 cans (15 oz each)black beans
- ·yellow onion
- ·garlic
- ·lime
- ·cilantro
- 1 can (14.5 oz)diced tomatoes
- ·jalapeño
- 1 teaspooncumin
- ·salt
- ·black pepper
- 2 tablespoonsolive oil
- 2 cupscooked rice or quinoa
Prep

Dice 1 medium yellow onion.

Mince 2 cloves garlic.

Juice 1 lime.

Chop a handful of fresh cilantro.

Slice 1 jalapeño (remove seeds for less heat if preferred).

Drain and rinse 2 cans black beans.
Method

Heat 2 tablespoons olive oil in a large skillet over medium-high heat.

Add diced onion and cook for 3–4 minutes until softened.

Add ground beef and cook, breaking it into small crumbles, until browned, about 5–6 minutes. Drain excess fat if needed.

Stir in minced garlic and cook for 1 minute until fragrant.

Add 1 teaspoon cumin, then pour in the drained and rinsed black beans and canned diced tomatoes (with their liquid).

Simmer for 5–7 minutes to let flavors blend.

Stir in juice from 1 lime and season with salt and pepper to taste.

Divide cooked rice or quinoa into bowls and top with the beef and bean mixture. Garnish with chopped cilantro and jalapeño slices.
Spice Tips
For extra warmth, add 1/2 teaspoon smoked paprika or a pinch of cumin to the beef mixture. For heat, stir in a dash of hot sauce or a sprinkle of cayenne pepper. A dollop of sour cream or crema softens the spice while cooling down any kick.
