Ingredients

  • 1 poundground beef
  • 3 wholebell peppers (mixed colors)
  • 4 clovesgarlic
  • 3 tablespoonsoy sauce
  • 1 tablespoonrice vinegar
  • 1 teaspoonbrown sugar
  • 1 teaspoonsesame oil
  • 1 tablespoonvegetable oil
  • 1 teaspoonginger (freshly grated)
  • ¼ teaspoonred pepper flakes
  • ½ teaspoonsalt
  • 2 cupwhite rice (cooked)

Prep

    Dice 3 bell peppers into 1-inch pieces.

    Mince 4 cloves garlic and grate 1 teaspoon fresh ginger.

Method

    Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add 1 pound ground beef and cook, breaking it up as it browns, for 5-7 minutes. Drain excess fat if needed.

    Add 4 minced garlic cloves and 1 teaspoon freshly grated ginger to the beef. Stir and cook for 1 minute until fragrant.

    Stir in 3 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon brown sugar, 1 teaspoon sesame oil, and 1/4 teaspoon red pepper flakes. Mix well.

    Add the diced bell peppers to the skillet and stir to combine. Cook over medium-high heat for 5-6 minutes, stirring occasionally, until peppers are tender-crisp and the sauce coats the beef.

    Taste and adjust seasoning with salt if needed. Serve over 2 cups cooked white rice.

Spice Tips

For deeper heat, increase red pepper flakes to 1/2 teaspoon or add a dash of hot sauce to the glaze. For smoke and complexity, swap half the soy sauce for tamari and add a pinch of smoked paprika. A squeeze of fresh lime juice or a scatter of sesame seeds brightens the finish.
