Sizzled Ground Beef & Peppers with Garlic Rice
Ingredients
- 1 poundground beef
- 3 wholebell peppers (assorted colors)
- 4 clovesgarlic
- 1½ cupslong-grain white rice
- 3 cupschicken broth
- 2 tablespoonssoy sauce
- 2 tablespoonsolive oil

Prep

Dice 3 bell peppers (any colors) into bite-sized pieces.

Mince 4 garlic cloves.
Method

Heat 2 tablespoons olive oil in a large skillet or shallow Dutch oven over medium-high heat.

Add the ground beef and cook, breaking it into small pieces as it browns, about 5 minutes. Drain excess fat if needed.

Stir in the minced garlic and cook for 1 minute until fragrant.

Add the diced bell peppers and sauté for 3–4 minutes, stirring occasionally, until they begin to soften.

Pour in 1.5 cups rice and stir constantly for 1 minute to toast the grains.

Add 3 cups chicken broth and 2 tablespoons soy sauce. Stir once, bring to a simmer, then reduce heat to medium-low.

Cover and cook for 15–18 minutes, until the rice is tender and liquid is absorbed. Do not stir.

Remove from heat, fluff with a fork, taste, and adjust salt and pepper as needed. Serve hot.
Spice Tips
To add warmth and depth, stir in 1/2 teaspoon smoked paprika or a pinch of cayenne pepper with the garlic. For brightness, finish with a squeeze of fresh lime juice or a sprinkle of chopped green onion and cilantro.
