Sizzled Ground Beef with Charred Peppers and Lime

Dice 3 bell peppers into bite-sized chunks.

Cut 1 lime in half for juicing.

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. When shimmering, add ground beef and cook, breaking it apart with a spoon, for 5-7 minutes until browned. Drain excess fat if needed. Season with salt and pepper, then transfer to a plate.

Add remaining 1 tablespoon oil to the same skillet. Add diced bell peppers and cook for 4-5 minutes, stirring occasionally, until edges are charred and peppers are tender-crisp.

Return beef to the skillet. Add minced garlic and cook for 1 minute until fragrant. Stir in soy sauce and juice from the lime. Toss everything together for 1 minute.

Taste and adjust seasoning with salt and pepper. Top with fresh cilantro and serve immediately over rice or with warm tortillas.
Spice Tips
For subtle heat, add a pinch of red pepper flakes when cooking the beef. For more brightness, stir in a splash of rice vinegar or fish sauce along with the soy sauce. A handful of sliced green onions can replace or join the cilantro for a milder herb flavor.
