Garlic Beef and Broccoli with Brown Butter

Ingredients

  • 1 poundground beef
  • 1 poundbroccoli
  • 4 tablespoonunsalted butter
  • 6 clovesgarlic
  • 3 tablespoonsoy sauce
  • 1 tablespoonrice vinegar
  • ½ teaspoonbrown sugar

  • ·black pepper

    Cut 1 pound broccoli into bite-sized florets.

    Mince 6 cloves garlic.

Method

    Heat 1 tablespoon butter in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned (about 5-7 minutes). Season with salt and pepper. Transfer to a plate.

    In the same skillet, melt remaining 3 tablespoons butter over medium heat. Add minced garlic and cook, swirling occasionally, until the butter turns golden brown and smells nutty (about 3-4 minutes). Watch carefully so it doesn't burn.

    Return beef to the skillet. Add soy sauce, rice vinegar, and brown sugar, stirring to combine.

    Add broccoli florets and 1/4 cup water. Cover and simmer over medium heat for 6-8 minutes, stirring once halfway through, until broccoli is tender-crisp.

    Uncover and cook for 1-2 minutes more to evaporate excess liquid. Taste and adjust seasoning with salt and pepper. Serve over rice.

Spice Tips

For a subtle kick, add 1/4 teaspoon white pepper or a pinch of red pepper flakes to the garlic butter. A splash of sesame oil (1/2 teaspoon) stirred in at the end adds toasted depth.

Serve over steamed white or brown rice. Leftovers keep in the fridge for 3 days and reheat beautifully.
