Skillet Ground Beef and Broccoli with Garlic-Soy Glaze
Ingredients
- 1 poundground beef
- 1 headbroccoli
- 4 clovesgarlic
- 3 tablespoonsoy sauce
- 1 tablespoonrice vinegar
- 1 tablespoonbrown sugar
- 2 tablespoonvegetable oil
- 1 tablespoonginger (fresh)
- ¼ cupwater
- 1 teaspooncornstarch
- 1 pinchsalt and pepper

Cut 1 head broccoli into bite-sized florets.

Mince 4 cloves garlic and mince 1 tablespoon fresh ginger.

Heat 1 tablespoon oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned (about 5 minutes). Drain excess fat if needed. Season with salt and pepper, then transfer to a plate.

Add remaining 1 tablespoon oil to the skillet. Add broccoli florets and cook, stirring occasionally, until they start to char and soften (about 5 minutes). Return beef to the skillet.

In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, ginger, water, and cornstarch until smooth.

Pour the glaze over the beef and broccoli. Stir constantly until the sauce thickens and coats everything (about 2 minutes). Taste and adjust seasoning if needed.

Spice Tips
For warmth, stir in 1/4 teaspoon red pepper flakes when adding the glaze. For deeper heat and complexity, use 1 teaspoon of sriracha or chile-garlic paste mixed into the sauce.
Serve over steamed white rice, jasmine rice, or egg noodles. Leftovers reheat well in a skillet over medium heat with a splash of water.
