Beef & Cabbage Skillet with Ginger and Soy
Ingredients
- 1 poundground beef
- 1 small headgreen cabbage
- 3 tablespoonsoy sauce
- 1 tablespoonginger
- 3 clovesgarlic
- 2 tablespoonvegetable oil
- 1 tablespoonrice vinegar
- 1 teaspoonbrown sugar

Shred 1 small head of green cabbage (about 6 cups).

Mince 1 tablespoon fresh ginger.

Mince 3 cloves garlic.

Slice 3 scallions on a bias.
Method

Heat 1 tablespoon oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart as it browns, 5-7 minutes until no pink remains. Transfer to a plate.

Add remaining 1 tablespoon oil to the skillet. Add minced ginger and garlic, stir until fragrant, about 30 seconds.

Add shredded cabbage and cook, stirring often, for 5-6 minutes until it starts to soften and lightly caramelize at the edges.

Return beef to the skillet. Stir in soy sauce, rice vinegar, and brown sugar. Toss everything together and cook for 1-2 minutes until heated through and flavors meld.

Taste and adjust seasoning if needed. Top with sliced scallions and serve over rice or noodles.
Spice Tips
For a spicy kick, add 1/2 teaspoon red pepper flakes or a dash of sriracha when returning the beef to the skillet. A squeeze of fresh lime juice brightens the finish. If you prefer deeper umami, swirl in 1/2 teaspoon of sesame oil at the end.
Serve over steamed rice or egg noodles. Leftovers keep well refrigerated for 3 days and reheat beautifully in the microwave or a skillet.
