Ginger-Scallion Ground Beef with Crispy Cabbage

- 1 small headgreen cabbage
- 4scallions

- 3 tablespoonsoy sauce

Chop 1 small head green cabbage into 1-inch pieces.

Mince 3 cloves garlic and 1 tablespoon fresh ginger.

Slice 4 scallions, separating white and light green parts from dark green tops.

Heat 1 tablespoon neutral oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it into small pieces with a spoon, until browned and cooked through, about 5 minutes. Transfer to a plate.

Add remaining 1 tablespoon oil to the skillet. Add cabbage and cook, stirring occasionally, until it begins to soften and the edges turn golden, about 6 minutes.

Push cabbage to the sides of the pan. Add minced garlic and ginger to the center and cook for 30 seconds until fragrant.

Return beef to the pan and stir to combine. Pour in soy sauce and rice vinegar, then toss everything together. Cook for 1 minute until warmed through.

Remove from heat. Drizzle with sesame oil and top with sliced scallions. Serve immediately.
Spice Tips
For a touch of heat, add 1/2 teaspoon red pepper flakes or a pinch of white pepper when you add the soy sauce. A squeeze of fresh lime juice at the end brightens the dish further.
