Ginger-Soy Ground Beef & Cabbage Skillet
Ingredients
- 1 poundground beef
- 1 head, mediumnapa cabbage
- 3 clovesgarlic
- 1 tablespoonfresh ginger
- 3 tablespoonsoy sauce
- 1 tablespoonrice vinegar
- 1 teaspoonsesame oil
- 1 tablespoonvegetable oil
- 3 stalksscallions
- 1 teaspoonsesame seeds

Slice napa cabbage into 1-inch strips, discarding the core.

Mince 3 cloves garlic and 1 tablespoon fresh ginger.

Slice 3 scallions on the bias; separate white and light green parts from dark green tops for garnish.

Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until no pink remains, about 5 minutes. Drain excess fat if needed.

Add minced garlic and ginger to the beef and stir constantly for 1 minute until fragrant.

Add chopped napa cabbage to the skillet in batches, stirring after each addition as it wilts, until all is incorporated, about 3 minutes.

Pour in soy sauce, rice vinegar, and sesame oil. Toss everything together and cook for 2 minutes until the cabbage is tender-crisp and the liquid coats the beef.

Taste and adjust seasoning if needed. Transfer to bowls, garnish with sliced scallions and sesame seeds, and serve immediately.
Spice Tips
For more heat, stir in 1/4 teaspoon red pepper flakes or a pinch of white pepper when you add the garlic. A splash of sriracha or chili-garlic sauce at the end adds both spice and depth.
Serve over steamed rice or with rice noodles to soak up the flavorful sauce. For extra freshness, add a squeeze of lime juice at the end.
