Skillet Beef and Cabbage with Garlic-Ginger Broth

- 1 small headgreen cabbage

Grate or mince 1 tablespoon fresh ginger.

Shred 1 small head green cabbage.

Slice 2 scallions, keeping whites and greens separate.

Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned, about 5 minutes. Drain excess fat if needed.

Add minced garlic and ginger to the skillet and cook for 1 minute until fragrant.

Add shredded cabbage, soy sauce, rice vinegar, and beef broth. Stir to combine.

Bring to a simmer, then reduce heat to medium and cook uncovered for 12–15 minutes, stirring occasionally, until cabbage is tender and flavors meld. The broth should reduce slightly and become glossy.

Finish with 1 teaspoon sesame oil and top with sliced scallions. Taste and adjust soy sauce or vinegar as needed. Serve warm, optionally over rice.
Spice Tips
For gentle warmth, add a pinch of white pepper or a few sliced red pepper flakes to the broth. For deeper heat, stir in ½ teaspoon Sriracha or chili-garlic paste. A splash of fresh lime juice at the end brightens the whole dish.
