Cilantro-Lime Ground Beef with Charred Corn

Ingredients

  • 1 poundground beef
  • 3 cupscorn
  • ·yellow onion
  • ·garlic
  • ·lime
  • ·cilantro
  • ·olive oil
  • ·cumin
  • ·salt
  • ·black pepper
  • ·red pepper flakes

Prep

    Dice 1 medium yellow onion.

    Mince 2 cloves garlic.

  3. 03

    Juice 1 lime.

    Roughly chop a small handful of cilantro.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it into small pieces, for 5–7 minutes until browned. Drain excess fat if needed.

    Push the beef to the side of the skillet. Add the corn to the empty side and let it sit undisturbed for 2–3 minutes to char, then stir and char another 2 minutes. Mix everything together.

    Add the diced onion and minced garlic to the beef and corn. Stir and cook for 2 minutes until fragrant.

    Sprinkle 1 1/2 teaspoons cumin, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and a pinch of red pepper flakes over the skillet. Stir well.

    Squeeze the lime juice (about 2 tablespoons) over the entire skillet and fold in the chopped cilantro. Taste and adjust salt and lime as needed. Cook for 1 minute more to warm through.

    Serve warm, with extra cilantro and lime wedges on the side if you like.

Spice Tips

For deeper heat, increase the red pepper flakes to 1/4 teaspoon or add a minced jalapeño to the onion step. A pinch of smoked paprika adds subtle richness. If you prefer it milder, skip the pepper flakes and let the lime and cilantro shine.
