Skillet Beef and Corn with Charred Tomatoes
Ingredients
- 1 poundground beef
- 2 cupscorn
- 1½ cupscherry tomatoes
- 1 mediumyellow onion
- 3 clovesgarlic
- 2 tablespoonsolive oil
- ½ cupchicken broth
- ·kosher salt

- 1 teaspooncumin
- ½ teaspoonpaprika
- ¼ cupfresh cilantro
- 1lime

Dice 1 medium yellow onion.

Mince 3 cloves garlic.

Halve 1.5 cups cherry tomatoes.

Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it into small pieces, until browned, about 5 minutes. Drain excess fat if needed.

Add the diced onion and garlic to the skillet. Stir and cook for 1 minute until fragrant.

Stir in 1 teaspoon cumin and 1/2 teaspoon paprika. Cook for 30 seconds.

Add 2 cups corn, the cherry tomatoes, and 1/2 cup chicken broth. Bring to a simmer.

Cook uncovered for 8–10 minutes, stirring occasionally, until the tomatoes begin to char and soften and liquid reduces slightly.

Season with salt and pepper to taste. Squeeze 1 lime over the skillet, then top with cilantro and serve.
Spice Tips
For a warm kick, add 1/4 teaspoon cayenne pepper or a pinch of red pepper flakes with the cumin. For deeper savory notes, swap half the cumin for chili powder or smoked paprika.
