Ingredients

  • 1 poundground beef
  • ·yellow onion
  • ·garlic
  • 2 cupscorn (fresh or frozen)
  • 1 cupbeef broth
  • 2 tablespoonstomato paste
  • 1 tablespoonWorcestershire sauce
  • ·kosher salt
  • ·black pepper
  • 1½ cupsall-purpose flour
  • 2 teaspoonsbaking powder
  • ¾ cupsharp cheddar cheese (shredded)
  • 4 tablespoonscold butter
  • ½ cupmilk

Prep

  1. 01

    Dice 1 medium yellow onion.

  2. 02

    Mince 2 cloves garlic.

Method

  1. 01

Heat a large 12-inch cast-iron skillet or oven-safe baking dish over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned, about 5 minutes. Drain excess fat if needed.

  2. 02

Add the diced onion to the beef and cook for 2 minutes until softened. Stir in minced garlic and cook for 30 seconds.

  3. 03

Add tomato paste and cook, stirring, for 1 minute to deepen the flavor. Pour in beef broth and Worcestershire sauce, then add corn. Stir well and season with 1 teaspoon salt and 1/2 teaspoon pepper. Simmer for 3 minutes while you make the biscuits.

  4. 04

In a bowl, whisk together flour, baking powder, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cut cold butter into small cubes and work it into the flour with your fingertips until the mixture resembles coarse sand. Stir in cheddar cheese, then add milk and stir just until a shaggy dough forms.

  5. 05

Drop spoonfuls of biscuit dough directly onto the simmering beef mixture, leaving some gaps for steam to escape. You should have 8 to 10 biscuits.

  6. 06

Transfer the skillet to a 400°F oven (if you used a stovetop skillet; if using a baking dish, no need to transfer). Bake for 12 to 15 minutes, until the biscuits are golden brown and cooked through. Let rest for 2 minutes before serving.

Spice Tips

For depth, add 1/2 teaspoon smoked paprika to the beef mixture before simmering. A dash of hot sauce stirred into the biscuit topping adds subtle heat without overpowering. A squeeze of fresh lime juice at the table brightens the whole dish.

A 12-inch cast-iron skillet works beautifully for this one-pan meal. You can also use an oven-safe baking dish. If your broth or Worcestershire is very salty, taste the beef mixture before adding the full salt measure — season to preference.
