Skillet Beef and Corn with Cilantro-Lime Finish
Ingredients

- ·corn kernels (fresh or frozen)
- 1 can (14.5 oz)diced tomatoes
- 1 cupbeef broth

Dice 1 small yellow onion.

Mince 2 cloves garlic.

Chop a handful of cilantro.

Cut 1 lime into wedges or halves for juicing.
Method

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 5 minutes. Drain excess fat if needed.

Add the diced onion and minced garlic to the skillet. Stir and cook for 2 minutes until softened and fragrant.

Stir in 1 teaspoon cumin and 1/2 teaspoon smoked paprika. Cook for 30 seconds until blooming.

Add the corn kernels, diced tomatoes (with their liquid), and 1 cup beef broth. Stir well.

Bring to a simmer and cook uncovered for 8–10 minutes, stirring occasionally, until the broth reduces slightly and flavors meld. Season with salt and black pepper to taste.

Finish with a squeeze of fresh lime juice and a generous handful of chopped cilantro. Serve immediately.
Spice Tips
For heat, stir in a pinch of cayenne or a diced jalapeño at step 2. For deeper warmth, add 1/4 teaspoon chipotle powder with the cumin. A splash of hot sauce at the end is also delicious.
