- 8 ounceegg noodles
- 1 cupbeef broth
- ½ cupsour cream
- 1 tablespoonWorcestershire sauce
- 2 tablespoonolive oil
- ·salt
- ·black pepper
- ·fresh parsley
Prep
- 01
Slice 12 ounces mushrooms.
- 02
Dice 1 medium yellow onion.
- 03
Mince 2 cloves garlic.
- 04
Chop 2 tablespoons fresh parsley for garnish.
Method
- 01
Bring a large pot of salted water to a boil. Add egg noodles and cook according to package directions until al dente. Drain and set aside.
- 02
While the noodles cook, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground beef, breaking it apart with a spoon, and cook until browned, about 5–7 minutes. Drain excess fat if needed. Transfer beef to a plate.
- 03
Add the remaining 1 tablespoon olive oil to the skillet. Add the sliced mushrooms and cook over medium-high heat until golden, about 4–5 minutes. Add the diced onion and minced garlic, and cook until softened, about 2 minutes.
- 04
Return the beef to the skillet. Stir in the beef broth and Worcestershire sauce. Simmer for 3–4 minutes to blend flavors.
- 05
Remove from heat. Stir in the sour cream until smooth. Season with salt and pepper to taste.
- 06
Divide the cooked noodles among bowls or plates. Top with the beef and mushroom mixture. Garnish with fresh parsley and serve immediately.
Spice Tips
For deeper flavor, add 1/4 teaspoon smoked paprika to the mushroom mixture. A pinch of fresh thyme or a dash of hot sauce stirred into the sour cream adds warmth. If you prefer it richer, substitute half the sour cream with cream cheese or crème fraîche.
