Creamy Beef and Mushroom Skillet with Thyme

  • 1 poundground beef
  • 12 ouncecremini mushrooms
  • 1yellow onion
  • 3 clovesgarlic
  • 1 cupbeef broth
  • ½ cupsour cream
  • 2 teaspoonfresh thyme
  • 2 tablespoonolive oil
  • ·salt
  • ·black pepper

Prep

    Slice 12 ounces cremini mushrooms into quarters.

    Dice 1 medium yellow onion.

    Mince 3 cloves garlic.

Method

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it into small pieces, until browned, about 5-7 minutes. Transfer to a plate.

    Add remaining 1 tablespoon olive oil to the skillet. Add mushrooms and cook, stirring occasionally, until golden and releasing their liquid, about 6-8 minutes. Season lightly with salt and pepper.

    Add onion to the skillet and cook, stirring, until softened, about 3-4 minutes. Add garlic and thyme, stir, and cook for 1 minute until fragrant.

    Pour in beef broth, scraping the bottom of the pan to release any browned bits. Return cooked beef to the skillet. Simmer for 5 minutes.

    Remove from heat and stir in sour cream until fully combined. Taste and adjust seasoning with salt and pepper. Serve warm over egg noodles, rice, or mashed potatoes.

Spice Tips

For deeper savory notes, add 1 teaspoon Dijon mustard with the sour cream. A pinch of smoked paprika (¼ teaspoon) adds subtle warmth. A squeeze of fresh lemon juice brightens the finish.

This dish is even better made a day ahead — reheat gently on the stovetop, thinning with a splash of broth if needed. Serve alongside buttered egg noodles, creamy mashed potatoes, or steamed rice.
